If you’re a shrimp fan you’re going to love this easy to make quick protein and antioxidant rich recipe. It is a perfect blend of flavors and texture combinations, making it both a great appetizer and a healthy snack.


Ingredients:
(makes 3 servings)
6 shrimp (prawns)
½ jalapeño pepper (chopped)
1 clove garlic
1 Tbsp lime juice
1 Tbsp coriander (chopped)
2 Tbsp olive oil
1/2 cucumber (cut into rounds)
Salt, to taste
How to prepare:
Combine the jalapeño, garlic, coriander, lime juice, and olive oil in a food processor and pulse until blended
Devein the shrimp and remove the tails, if not already done
Place the shrimp in a sealable plastic bag/container and pour in the marinade Then refrigerate for 30 minutes
Cut the cucumber around its circumference into equal size rounds
Grill the shrimp on high heat for 2-3 minutes per side
Place each shrimp on a cucumber round and garnish with additional lime zest and cilantro. Sprinkle with salt and pepper, to taste
