Quinoa apple kheer

Quinoa is a terrific source of vegan protein, providing all nine essential amino acids that the body needs but cannot produce on its own.This high fiber dessert will satisfy your sweet cravings while making you feel full and while also moderating your sugar levels.

Ingredients:

(makes 2 servings)

  • ½ cup quinoa (cooked)       

  • 1 tbsp of ghee                            

  • ½ apple (finely chopped)                            

  • 4 thin slices (2 mm) of an apple                           

  • 1 cup skimmed milk              

  • 3 - 4 saffron strands            

  • A pinch of cardamom powder  

  • 2 tsp sugar                         

  • 1 tbsp pistachios


How to prepare:

  1. Heat ghee in a pot and add the finely chopped apples. Saute for 3-4 minutes till slightly soft and add quinoa, milk, saffron and cardamom to it

  2. Bring it to a boil and simmer for 25-30 minutes until the milk reduces by a third and the mixture thickens up. Simmer for longer if you like your kheer really thick

  3. Add stevia powder and stir until combined. Cool to room temperature, and then refrigerate for an hour

  4. Serve chilled, topped with chopped pistachios and apple slices


Note: You can replace sugar with stevia to reduce the amount of simple carbs
